The first time I ate Portabella mushrooms was at a small Italian restaurant in Palm Bay, Florida. I had no idea what they were but they sounded exotic so I ordered the Grilled Portabella Salad which came with Balsamic Vinaigrette, which I’d also never had. I became an instant fan of Portabella’s (And Balsamic)! I love the smoky grilled flavor and the meaty texture of the fresh brown mushrooms.
I’ve eaten Portabellas hundreds of times since then, raw, grilled, sautéed, stuffed…but my absolute favorite is Portabella Fries. I could eat these crisp but juicy wedges of lightly battered shrooms all night long, especially when dipped in Chipotle Ranch Dressing!
My Portabella fries are Fun, Fancy but Easy, like all our Date Night Recipes!
Ingredients
One Portabella Mushroom per person
Chipotle Ranch Dressing
Two Eggs
Flour
Panko Bread Crumbs
Salt
Pepper
Onion Powder
Garlic Powder
Cayenne Pepper
Chili Powder
Oil
Preparation
Remove stems from mushrooms. Using a spoon carefully remove the gills by scraping them. Slice the mushroom into ½ wide slices. Break eggs into a small bowl. Mix the flour and spices together on a small plate.
Dip mushroom slices into egg and then roll each slice on the plate of flour/spice mixture. Fry in a deep fryer, fry daddy or sauce pan at 375 degrees for about 4 minutes or until golden brown. Serve with bottled chipotle ranch dressing.
WARNING – You may become so enraptured with the Portabella Fries that you forget to pay attention to your date!
